ランチミーティングと日本語では言いますが、
これを lunch meeting と直訳すると、「ランチのためのミーティング」と聞こえてしまいます。
（名詞（lunch) ＋名詞（meeting) は、前の名詞が、後ろの名詞の「目的」あるいは「場所」・「所有者」を表す時に、使われます。）
この場合は、そういう意味ではなく、「ランチを取りながらミーティング」という意味ですので、
over lunch （昼食をとりながら）という表現を使うのが適切です。
(お茶を飲みながら でしたら、over a cup of coffee などとなります）
また、相手が上司ですので、少々フォーマルな表現が適切でしょうから
Would you like to talk （about it) over lunch?
（ランチを取りながら、それについて話すのはいかがですか？）
という相手の意向を尋ねる言い方が最適でしょう。
（meeting を使ってもよいですが、上司と二人きりでしたら、talk とするのが一番自然ですね）
あるいは meeting を使うなら、
Would you like to have a meeting over lunch?
となります。
英語にする場合、品詞を考えずに、そのまま名詞＋名詞にしてしまっているをよく見かけますが、上記のように、名詞＋名詞は、原則として「目的」「所有」「場所」を表すので、それ以外は、通常、別の表現で表すことになります。
また、How about~? という表現は、カジュアルな言い方ですので、かなり仲がよい上司、アメリカなど上下関係が緩い環境以外には適切とは言いかねます。
また、How about の次は、通常、名詞か動名詞になります。

意味は、｢～するのはいかがですか？｣です。
この文の最初か最後に、
for saving your time (あなたの貴重なお時間を節約するために)をつけると、思いやりのある提案になりますね。
luncheonは日本語にもなっている｢ランチョン｣です。昼食や軽食、昼食会や午餐会の意味もあります。

最後に具体的な時間や日にちを入れることもできます。

If you don't mind, I'd like to continue this over lunch.
When suggesting continuing business over lunch, which is supposed to be a break, it is always a good idea to ask if the other person is okay with it. Even if they don't have an option either way, you can make it seem like they can say no.
A polite way to do this is using phrases like:
- "If you don't mind...."
- "If you have time..."
- "If it's alright with you..."
From there, you can propose a lunch meeting.
昼食は本来休憩時間なので、そこで仕事を続ける場合、それで構わないかどうか尋ねた方がいいです。仮に断ることができない状況だったとしても、"no" と言えるような聞き方はできます。

If you have a lunch meeting, you are doing two things at the same time and you are saving time too, which is good time management.
"I am very busy today, but I have time in my lunch break. Let's get something to eat!"
