「食感は」は「Texture」と言いますが、舌触りに該当する英語は思い浮かびません。
きゅうりを塩で揉むことは、「pickle cucumbers with salt」と言います。
西洋には、pickled cucumber はありますが、あちらは酢で漬け込みます。
日本みたいに塩では揉まないので、「Pickled Japanese cucumber」と言えば、西洋とは違うものだということがわかります。
質問者様のお求めの英語は:「In Japan, we rub cucumbers in salt to pickle them to get a softer texture」あたりが適当かと思います。

専門的な言い方、「mouthfeel」も言えますが、「」よりよく使われません。
ie: This Cabernet has a *complex mouthfeel.
