I'm stuffed! - You don't necessarily have to finish the meal, it is just expressing that you physically cannot eat anymore & generally quite enjoyed it!

polish off～ は「食べ物などをサッと平らげる」と言う意味で、「完食する」にスピードが加わった言い方です。
（polish は もともと「磨く」と言う意味、off は「追いやって無くなる」と言うニュアンスを含んでいますので「お皿を磨くように、カラになるまで食べる」→完食する・・・イメージ出来たかと思います！）
