「仕事が終わる時間は決まってない」は英語ではこのようです。
There is no official end time at my work.
There is no official time we get off work.
Official は日本語では「公式」の意味です。日本語ではこの場合には「公式」より「決まった」(decided)の方が自然ですが、英語では decidedより official の方が自然です。
仕事が終わる時間→ ending time (for work)/time you get off work

仕事が終わる= the end of work / the end of a work shift /the end of a work day
時間 = time
決まってない = is undecided / hasn't been decided (yet)
Decided という言葉はこの場合ちょっと厳しいと思います。この二つの例文はもっとカジュアルの方です。一つ目の例文の set は decided と同じ意味です。
