会食は dinner とか business dinner です。
もし、それがお昼だったら、 lunch あるいはbusiness lunch ですね。
一度会食を設定させて→お食事に招待したい ということなので
シンプルな言い方だと↓これで十分伝わりますよ。
I would like to invite you to dinner.
（あなたを食事（会食）にご招待したいのですが。）
↓はあえてbusiness dinner を使ってお仕事色を強めてます。
sometime はいつか、とか 今度という意味です。
Could I arrange a business dinner sometime?
（今度、会食を設定させていただいてもよいですか？）
Let me set up a business dinner with you, please.
（今度会食を設定させてくださいね。）
↑は少し上２つよりはカジュアルな感じです。

お客さんとの会食は英語で「business dinner」や「dinner meeting」といいます。
「設定する」は「set up」、「set」、「arrange」を使うことが多いです。
