スッポンって英語でなんて言うの？

I want to try a hot pot with softshell turtle some day.
すっぽん鍋をいつか食べてみたい。

すっぽん は softshell turtle です。

欧米では珍しい食材なので、もう少し説明が必要かもしれません。
例えば softshell turtle is eaten quite often in Japan (すっぽんは日本で結構よく食べられています), you can eat softshell turtle in many parts of Japan (すっぽんは日本の多くの地域で食べられる) などと言えます。

「スッポン」は英語では turtle や soft-shelled turtle と言います。

スッポン鍋を英語で言いたいならこのようです。

（１）turtle nabe; nabe with turtle in it
「鍋」（nabe) は日本語なんでが、日本料理なので日本の事がよく知っている外国人と話している時なら nabe 言ってもふさわしいです。

例えば
Tonight, let's have nabe with turtle for dinner!
今夜、スッポン鍋を食べましょう。

（２）turtle stew; stew with turtle in it
もし海外に行く時か相手が日本の事がそんなに分からない人であれば、nabe より、英語の stew と言ったら良いです。

例えば
Let's have turtle stew tonight.
今夜すっぽん鍋食べましょう。

すっぽん鍋をいつか食べてみたいのですが、今まで勇気がなくて、まだ食べたことがないです。→ I want to try eating turtle nabe sometime, but up until now I haven't been brave enough so I haven't tried it yet.

「スッポン」という動物の名前を英語で伝えると、「soft shelled turtle」という名前を使います。「Turtle」は「かめ」という意味があって、「soft shelled」は「柔らかい貝」という意味があります。例えば、「Soft shelled turtles don't bite humans.」という文章を使っても良いです。「Bite」は「かむ」です。
