But you, when you fast, anoint your head and wash your face.
訳:しかし、あなたが断食するときには、自分の頭に油を塗り、顔を洗いなさい
と書いてある通り、fast が「断食をする」という動詞になります。
I have been fasting since last night.というと「昨夜から断食をしています。」という意味になります。
I have been fasting for 2 days.というと「2日間、断食をしています。」という意味になります。
文法的に考えると「断食をしています」というと1~2時間や"今"という事はあり得ませんので、"今、断食中です"と言いたい場合は、英語では下のような用法を使います。
現在完了進行形+since いつから
現在完了進行形+for 期間
「今から始めます」というのであれば、まだ始まってないですので現在形ではなく未来形を使用し、
I'm going to start fasting from now.
from+いつから始めるか
これで表現がカバーできると思います。
