ハプニングはこの使い方なら英語であまり聞いたことないので、「unexpected event」は通じると思います。昔、「happening」はおしゃれなイベントなどで使われていたそうです。
旅行に行くといつもハプニングが起きます。でもそれがいつも楽しいです。
Whenever I go on a trip, there are always unexpected events, but that's what makes it fun.
Something always happens when we go on vacation but that makes it fun.
There is always some kind of happening when we are on vacation and that makes things interesting.
happen「(出来事などが)起こる」という動詞を使った言い方。

「旅行に行くといつも何かが起こるけど、それが（旅行を）楽しくする。」
happening 「ハプニング・出来事」という名詞を使った言い方。
2) There is always some kind of happening when we are on vacation and that makes things interesting.
「旅行中にいつもハプニングがあって、それが（旅行を）面白くしてくれる。」
