☆または、"so I often end up replying on Saturdays, Sundays, or on holidays."＝「なので土日、あるいは祝日に返信してしまうことが多いので」という表現も使えます。

この場合、次のような言い方ができますよ。
A: Sorry for my late reply.
「返信が遅くなってごめんね」
B: No need to apologize. I'm always busy during the week too. A lot of times, I don't get back to people until the weekend or holidays.

to get back to ... で「(人に)返事をする」
