日本では「すみませーん！」とか「お願いしまーす！」って店員さんを呼びますが、英語ではなんて言うんですか？

どんなお店に行くかによりますが、欧米では大きな声で店員さんを呼ぶことはあまりいいマナーとは言えないので声のトーンを落とし、店員さんとアイコンタクトを取ることをお勧めします。
手をあげて店員さんを呼ぶこともできますが、手を振ることはマナー違反、という声もあります。
店員さんが近くに来た時に軽く手をあげてExcuse meと言えば注文を取りに来てくれるはずです。
例：
Excuse me, I'd like to order.
すみません、注文したいのですが。
Excuse me, may I order?
すみません、注文してもいいですか？
