When I run across a word I don't know, I try to guess the meaning and look it up later.
When I encounter an unfamiliar word, I try to figure out the meaning, and check the dictionary later.
出会う = encounter, run across, stumble across
辞書で調べる = look up (a word) (in the dictionary)
言葉だから、「look it up」だけと言っても、「辞書で」という意味も通じます。「in the dictionary」と言わなくても大丈夫です。
