"high-heeled shoes" is the official name for this type of shoes, but it's common to refer to them as "high heels" or even just "heels".

THe most common word used in the States for high-heeled shoes would be stilettos. Stilettos are shoes with heels that are above 3 inches. We would normally wear these to parties, clubs and formal events. They are often worn for professional purposes. Pumps are high-heeled shoes that are 3 inches and below. 1 inch high heels are called "kitten heels".
To describe/say shoes with heels you would simply say 'high heels' so you could say
'I'm going out tonight and will be wearing my high heels'
You can also call them 'high heeled shoes' so for example 'I'm going to buy a pair of red high heeled shoes'

There are not many other ways to high heal shoes. They are simply high heels. There are a few types of high heels, like stilettos. Stilettos are the type of really high heel shoes with a very thing heel. Otherwise, if it is a thick heel, you can say, the are high heel shoes with a chunky heel.
Sometimes you can describe the how high the heel is in measurements. "I am wearing 6-inch high heels with my dress" or "These high heels have a 3-inch heel". I've never heard it described in centimeters, only inches
