夏休みはsummer holidayやsummer vacationと言いますが、夏休みの宿題の場合はvacationやholidayを使わなくても大丈夫です。summer homeworkだけで通じます。
宿題はhomeworkやassignmentで大丈夫です。

Sometimes after a long year of school, we still have to do homework even during summer vacation time. It's not very fun but it can be important for getting good grades.
There are two very common terms we can use to talk for this:
1) Summer Homework
This can be just normal homework that we need to complete over the summer.
2) Summer Project
Many times, there might be a very big assignment we need to complete during the summer. This is called a "summer project". When we return to school after summer vacation, sometimes we need to give a presentation in front of the class with this summer project.

I have homework over the summer holidays
In Australia we call a vacation a holiday. So we call it our summer holidays rather than summer vacation. Therefore if we had to do or complete an assignment or received homework we would refer to it like this.
I have an assignment to complete by the end of the summer holidays.
I have homework to do over the summer holidays.
In America it would be called summer vacation so you would substitute the words in the sentences.
オーストラリアではバケーションのことをホリデーと言います。なので、サマーバケーションではなく、サマーホリデーと呼んでいます。夏休みの宿題や課題があれば、このように表現します。

The assignments that are given to students over the summer holiday can just be called a summer assignment. Normally, in the school year students receive homework or projects so you can always use those terms as well.
Well, during holidays students may receive some work to do at home...it may be in the form of exercises or perhaps as a bigger project or specific task.
