You can simply call it Kendo, then explain what it entails. You can explain that it's a Japanese traditional form fencing. Then you can explain how people usually dress and what tools are usually used.
To someone who was unaware the name of the sport was Kendo, the term Traditional Japanese fencing would give the listener a great image and idea of the subject
剣道というスポーツを知らない人には、"Traditional Japanese fencing"と言えば、イメージしてもらいやすいでしょう。
Japanese martial art similar to fencing using bamboo swords
Most people would understand what 'Kendo' is as it's a martial art and we would call it the same thing.
If you wanted to explain to someone who didn't know then you could explain it's a Japanese martial art like fencing using bamboo swords
これは武道なので、大半の人は剣道がどういうものなのか理解できると思います。ですから、英語でも同じように'Kendo'と言えます。
