"The holidays"は日本の正月期間、そして年末のクリスマス頃から始まる休みも含みます。とはいえ、欧米では日本より、お正月の休みは短い場合が多いと思います。
お正月休みでしたら、"the new year's holiday" が一番適した表現だと思います。"The new year holidays" も間違いではありません。ただ、"the" を最初に付けた方が文法的には良いです。
