クレジットカードのPINナンバーを忘れてしまったので、サインで済ませたいにですが、なんと言えばいいでしょうか。

普通にサインをしたいと言えば良いと思います。availableは、かなり使える形容詞なので覚えておいて損はないです。例えば、「彼はいつつかまる?」と言いたい場合、"When will he be avaiable?"と表現できたりします。

Some establishments or retail outlets allow you to use your signature, instead of providing your security pin number... However this is quite RARE these days, as companies (more and more) are trying to protect themselves from credit card fraud!
