この状態ははっきりわかりませんが、魚の後ろの半分(back half, the tail end)か頭の半分(front half, the head)をレストランで頼むってことでしょうか。

この場合、次のような言い方ができますよ。

ーAre you going to order the half with the head today even though you ordered the half with the tail last time?
「前回は尻尾の方頼んだのに、今日は頭のほう頼むの？」
the half with the head「頭のほう」
the half with the tail「尻尾のほう」と言えます。
