so = なので・ですから
I would like to try doing〜 = 〜をやってみたいです
I would like to try doing the conversation from memory ＝ 暗唱で会話をしてみたいです
without looking at the text ＝ テキストを見ずに

日本語をそのまま訳すと上記の英文になります。
「会話をする」は「do the conversation」です。say the conversation や speak the conversationとは言いません。
「テキストを見ずに」が「without looking at the text」です。
