In my area we don't use the term, "spring vegetables". We would say early vegetables, baby vegetables, or early produce. You can also say "vegetables in season."
If you wish to give a specific name to vegetables which are in season in spring, then you can call them 'spring vegetables'.
"Would you like some spring radishes with your salad?'
春に旬を迎える野菜に特定の名称を与えたいなら、'spring vegetables'(春野菜)と言えます。
"Would you like some spring radishes with your salad?'
