今まで見たことない、知らない料理だから、これが何か教えてください。と伝えた方がニュアンスとして受け手にも伝わりやすいと思います。
・I’ve never seen it before!
今まで一度も見たことがない。
現在完了形なので過去から今現在にかけて物事が続いているニュアンスとなります。
・Would you mind ~ (~してもよろしいでしょうか？)
相手に対して、その物事に対して可能かどうかを聞く丁寧な表現となります。

これは何ですか？と単純に聞きたい場合は、
What is this?でも下品な言い方でもないですし良いと思いますが。
丁寧に聞きたい場合、Could you tell me～？ Can you tell me～？
を加えて聞くと良いです。
Could you tell me what it is?
Can you tell me what these foods are.
などと聞けば、店員さんが嫌な顔をすることはないでしょうね。
When to use this or that
Use 'this' for one object (singular) which is here (near to us)
Use 'that' for one object (singular) which is there (further away)

So when you want to question something on the menu in front of you - use the word 'this'
Example:
A: What is this?
B: That is butter chicken
A: What is this?
B: That is barbecue sauce

When pointing out something that another customer is eating - use the term 'that'
Example
A: What is that meal he is eating over there?
B: That is our leg of lamb
this と thatの使い方
'this' 自分に近い物、物体、対象を指す
'that' 自分から遠い物、物体、対象を指す

自分の目の前にあるメニューを示して聞くときはThisを使います。
例:
A: What is this? これは何ですか？
B: That is butter chicken それはバターチキンです。
A: What is this? これは何ですか？
B: That is barbecue sauce それはバーベキューソースです。

ほかのお客さんが食べているものを示すときは、Thatを使います
例
A: What is that meal he is eating over there? あそこで食べている料理は何ですか？

"This looks interesting ,what is it?'
It is polite to compliment the food before asking for an explanation of what it is.
"Could you please tell me what this is?"
This is a more direct way of asking for an explanation of what you have been served.
Example:
A:Here is your meal Sir/Madam
B:Oh wow this looks interesting ,what is it?
A:I am not sure I understand your question
B:I mean..Could you tell me what this is?
A: Oh this is a sirloin steak.
B:Aah sirloin!It looks and smells delicious.Thank you for explaining it to me.
"This looks interesting ,what is it?'
これで丁寧にどのような食事か聞く事ができます。
"Could you please tell me what this is?"
このフレーズで具体的にどのような食事か聞く事ができます。
例:
A:Here is your meal Sir/Madam
B:Oh wow this looks interesting ,what is it?
A:I am not sure I understand your question
B:I mean..Could you tell me what this is?
A: Oh this is a sirloin steak.
B:Aah sirloin!It looks and smells delicious.Thank you for explaining it to me.
Would you be so nice as to tell me what sort of dish this is?
この２つの言い方ははフォーマルな場ではとても有効です。
１行目は一般的なフォーマルな言い方です。必ず"May I"を最初に言いましょう。
２行目はもっともフォーマルな言い方です。”Would you be so nice/kind as to”＋動詞、という構成になります。

When you are not sure what is on your plate, you can ask what is in your meal.
The waiter will then tell you what your meal is made up of, the ingredients and maybe the type of tastes you can expect.
Dish: plate, type of meal
Ingredients: the items that are cooked into a meal, the items that make up a meal.
"Thank you for this great looking dish. I'm not sure what this is, please explain it to me?"
お皿のものが何かわからないとき、その料理が何かを尋ねることができます。ウエイターは、その料理が何でできているか、材料やどのような味かを教えてくれるでしょう。
