難しいは hard や difficult などの単語が使えます。
It's hard などの it's は難しい何かを指します。
表現するは to express です。
「英語で自分の意見や気持ちを表現するのが難しい」
"It's hard to express your own opinions and feelings in English" など
I find it difficult to express my thoughts and opinions in English.
この場合、次のような言い方ができますよ。
ーI find it difficult to express my thoughts and opinions in English.
「英語で気持ちや意見を表現するのは難しいと思う」
to find ...difficult to ... で「…するのが難しいと思う・感じる」
