実際はまず始めに先生に謝る丁寧な言い方の例では、

I won't make it to(~に[間に合わない](https://eikaiwa.dmm.com/uknow/questions/1173/)、~に行けない)
という言い方が最初の例文ですね。
次は、〝I need to”(~する必要がある、~しなければならない)という表現を使って、〝自分の気持ちとは裏腹に”、つまり、”仕方がなく”、という意味合いを入れた表現もまた有効ですね。
due to my private matters (私の個人的な事由で)、ここは詳しく説明しなくてもいいはずですので、いわゆる〝ちょっと用事が” という時は便利な断り方になります。
同じように、最後の例でも〝take care of something” (用事があって)という意味を、〝I have to”(~しなければならない)という言い方にして、やむを得ない、というニュアンスを入れてます。
I won't be available (私は(時間を)空けられない)という直訳ですが、何か断る時にはよくネイティブも使う自然な表現。日本人であればちょっと気になっちゃうかもしれませんが、決して上目線の表現ではないので自由に使えます。 またこの場合でも最後は〝sorry”(すいませ~ん)を付けるのを忘れたくないですね。
どれもまた自然な表現になりますので他の先生の表現と合わせてご参考になればと思います。

Last minuteというのは直訳すると「最後の1分」、要は「直前、間近」という意味です。
クリスマス前になるとアメリカでは家族友人にプレゼントを買うのが一般的ですが、クリスマス直前に買い物をすることをlast minute shoppingと言ったりします。
キャンセルする時は先生に一言、
I'll book your lesson again! See you soon!(また先生のレッスンを予約します。またお会いしましょうね!)と付け加えてみてはどうでしょうか(^_^)

Either of the phrases are acceptable. It's not always necessary to explain the reason why you cannot make the class. I have to rearrange my schedule implies that something has come up that you need to deal with.

In sentence one, you are explaining that things have come up in your schedule and this has caused a change in your circumstances, therefore you will not be able to attend the lesson.
In sentence two: You are simply stating that you not be able to attend the lesson.
In sentence three: to be "tied up" means to be busy with no way of making time in your schedule for anything else therefore you cannot have the arranged lesson.
