この際 "since" を使った方が良いです。"Ever since" とは 「～してから、」に合っています。

運動する時間が取れなくなった。
取れなくなったには "take" と言いたいかもしれませんが、"to take the time to~" は意味は違います。"I can't find the time to~" とは「～時間が取れない」「～暇がない」と言う意味です。
Since I stopped participating in my afterschool activities, I find it hard to make time to work out.
この場合、次のような言い方ができますよ。
ーSince I stopped participating in my afterschool activities, I find it hard to make time to work out.
「部活を辞めてから運動をする時間を作るのが難しい」
最後の部分を次のようにも言えます。
I find it hard to do some kind of exercise.
「何らかの運動をするにが難しい」
