DMMの先生との会話で、「英会話の難しいことはなんですか？」と言われて、上記の事を言おうとしましたが、言い方がわかりませんでした。

こんな言い方はどうでしょう。
I don't know how to say what I want to say in English.
（私は自分が言いたい事を英語でどう言うのかが分かりません）
I don't know = 分からない
how to say = 言い方、どうやって言うのか
what I want to say = 私が言いたい事
ここでのポイントは what I want to say のwhatです。これは「何？」と尋ねる疑問詞ではなく、「〜のもの」という関係代名詞です。ちょっと分かりにくですが英会話でも書き言葉でも非常によく使われ、意味としては the thing(s) （もの、こと）と同じ役割を持っています。
例
私が言いたい事
what I want to say = the things I want to say
彼が食べているもの
what he is eating = the thing he is eating
What he is eating is fried rice. （彼が食べているものはチャーハンです）
