I've been feeling a little under the weather recently
Here are three possible responses. However, this question is not exactly clear. It seems more like a health question than any other sort of question. However in that case, the question would be better phrased: "How have you been feeling recently?"It could be you wish to ask about activities the teacher has been involved with. In that case it would e better to ask: "What have you been doing recently."

You can really answer this question in any way that you want.
Usually the beginning of your response will be "I have been..." and then the rest is flexible.
If you have been sick, busy, on vacation, etc. all of these things can come afterwards to explain what you have done since you spoke with the person last.
