この場合は、次のような言い方ができますよ。

「こんなふうにしばらくジムに行かなかったことはないよね」
to miss going to the gym「ジムに行きそこねる」
for a long time「長い間」
ーIt's been a while since you had such a long gap between workouts at the gym.
「ジムでトレーニングの間がこんなに間隔が開くのは久しぶりだね」
to have such a long gap between workouts 「トレーニングの間にこんなに長い間隔がある」
