I appreciate your honesty. を訳すと、「正直に言っていただき、感謝しています。」とてもフォーマルな表現です。もう少しカジュアルに近い表現を使いたい場合は、I appreciate ではなく、thank you を使うのが良いかと思います。たとえば、Thank you for being so honest.

It's probably better not to thank the teacher directly as it may seem repetitive and unnecessary - and that is the teacher's job, of course. Alternativeley, you may like to acknowledge that you feel his correction is being very useful by saying something like:
"I appreciate your correction!"
Intonation is more important than what you say.

The teacher always has a duty to correct you whenever you make mistakes. It is the teacher's job to do so. However, by thanking him/her, you are expressing your gratitude for his/her having corrected you although it is his/her job. When thanking him/her, it is important to be polite. The phrase 'so much' means 'to a great degree' or 'very much'. The adverb 'so' on its own, means 'to such a great extent or degree'.
The teacher will appreciate it very much if you say:
Thank you so much teacher for correcting me.

"proactive" means to do an action that is positive and forward moving. By saying "Thank you for proactively correcting me" you are thanking your teacher for taking action to help you by correcting you.
"being honest" is a nice way to say that your teacher didn't let your mistake go on purpose.
"Thank you for the correction" is probably the easiest to use in a lesson and is just as effective.
