whichも入れましたが、whatでもwhichでもどちらでも同じです。
またほかの言い方で、
I don't know the stores or the locations.
も大丈夫です。
少しいうなら、shopよりもstoreの方が使われるかな。
でもどちらでも大丈夫です。

どのお店もどこにあるのか分からない。
お店はイギリスなどでは shop ということが多いですが、アメリカでは store がよく使われます。
locations を除いても伝わります。
2) I couldn't find my way around the shopping centre/center/mall.
ショッピングセンターでどこに行けばいいのか分からなかった。
find my way around は 行き方 が分かるというような意味です。
I was able to find my way around Shinjuku Station 新宿駅で迷わなかった。
ショッピングセンターはイギリスなどでは shopping centre と言い、アメリカでは shopping mall 又は mall と言います。因みに centre はイギリス英語で、center はアメリカ英語です。
