In my opinion the best and most natural way to say it is by using the first two.
To be confident about something means that you know how to so it, you trust that you will do it correctly.
Not confident means that you do not 100% trust yourself to do something or you do not 100% know how to.

個人的には、例1、例2が一番ナチュラルでオススメです。
「confident」は、それができること、それをキチンとする自信があることを表します。
「not confident」は、自信がないことを表します。

= SLANG - to be unskilled or not very good at something.
