It's edible' is a way of saying something can be eaten, but is not necessarily very nice.
We do not need to say the first part of the sentence.
By saying 'it's edible', the other person will know that while the food IS edible, it's probably not very nice.
「It's edible（食べられる）」は「食べられるけど、必ずしもうまくない」と言う時に使われます。
「おいしくない」は言わなくてもいいです。
'It's edible' と言えば、相手は「食べられるけど、たぶん大してうまくないんだろうな」とわかります。

it doesn't taste that(又はsoやvery) goodは「そんなに美味しくない」という意味です。
後半のbut it's still foodは「それでも食べ物だよ」という意味なので「食べられる」の意味にもなります。

For this statement, you usually put your opinion about the food first. So here, you say that you dislike it, or that it doesn't taste good or nice. You can then follow this with 'but I'll eat it' or one of the other phrases.
Instead of the word 'but' you can also use 'however'.
Another way is to say 'Although it isn't very nice, I'll eat it' or 'Even though it's not nice, I can eat it'
