It's edible' is a way of saying something can be eaten, but is not necessarily very nice.
We do not need to say the first part of the sentence.
By saying 'it's edible', the other person will know that while the food IS edible, it's probably not very nice.
「そんなに美味しくはありません」＝「It doesn't taste very nice/good」、「it's not very tasty/nice/good」
「が食べれます」＝「but it's edible」,「it's just about edible!」
「edible」という形容詞は「食べれる」、「食用の」という意味です。「it's just about edible」という英語は少し皮肉ったニュアンスがありますのでこの文脈でちょうどいいと思います＾＾
少し違うニュアンスですが、
珍しい食べ物について話をする時に、
このような言い方もあります:
It doesn't taste that good, but it's still food.
it doesn't taste that(又はsoやvery) goodは「そんなに美味しくない」という意味です。
後半のbut it's still foodは「それでも食べ物だよ」という意味なので「食べられる」の意味にもなります。

1. If you are tired or really hungry you may just decide to have a dish that is not very tempting but which will satisfy your appetite.
2. You are too tired or just wish to complete the eating process quickly.

If you are describing something that can be eaten then we can call this 'edible'
If something is not very tasty then you could also say it's not very nice
何かを食べることができることは、'edible'（食べられる）で表せます。
何かがあまりおいしくないことは、'it's not very nice' と表せます。
For this statement, you usually put your opinion about the food first. So here, you say that you dislike it, or that it doesn't taste good or nice. You can then follow this with 'but I'll eat it' or one of the other phrases.
Instead of the word 'but' you can also use 'however'.
Another way is to say 'Although it isn't very nice, I'll eat it' or 'Even though it's not nice, I can eat it'
