This means that you found it hard to pronounce the word and since it is in the past tense, it means you can now pronounce the word.
*I could not pronounce that word.- This is a simple way of expressing yourself.

In order to explain that there is a certain word which do not believe you are pronouncing correctly, you could state "I find pronunciation of that word very difficult". This makes it obvious to whomever you are talking to that you may not pronounce this word correctly, and makes them aware of your struggle.
