混雑したレストランで只今、大変、混雑しているのでお待ち頂けますか?とお客様に丁寧にお伝えしたい。

If you want to be very polite to your customers, you may tell them that the "house is full" and that there will be a wait time for them to patron the restaurant. The most formal sentence suggestion I provided is the third example. It's lets your customer know the problem and you are asking them what they would like to do.
もしお客さんにとても丁寧にしたいのなら、"house is full" と言うことができます。レストランの席に着くまでに待ち時間があるということです。3番目の例が、一番フォーマルな表現です。お客さんに現在、レストランがどういう状況で、お客さんがどうしたいかを聞いてみましょう。

"You might have to wait for 40 minutes, is that ok?" (This is a more informal way of asking if someone is willing to wait.) You could also say... "There will be a table available in about 40 minutes, are you willing to wait that long?
