人数って英語でなんて言うの？

「人数」に関しては日本語と英語はほぼ同じです。上記の number of people は日本語の言葉より少し長いですが、意味的には「人の数」ですので、どういった場面でも使える言葉です。「人数が多い・少ない」と言いたい時は、上記の英訳ではなく there are many people / there are few people が一般的です。

How many people are you? は「何人ですか？」「何名様ですか？」という質問です。
飲酒店でよく聞く質問です。
なお、「人数」は英語で number of people と言います。
例えば: "a big number number of people" "a small number of people" は大きい数と小さい数を伝えた時に使いますが、"many people" "few people" (大勢）(小勢) の方がナチュラルな単語です。

"What's the head count?" は例えば集合時間に会って人数を確認したい時に使います。

「人数」は英語で number of people と言います。「人数が多い・少ない」と言いたい時に、The number of people is large/small と言えます。また、 There are a lot of people （人数が多い時に）や There aren't that many people （少ない時に）とも言えます。

「人数が多いすぎる・少なすぎる」と言う時は、
"There are too many people. /There are too few people."です。
