It really depends what detail the officials require from you. All the above respenses completely answer the question, 'Where?'. 'Who' you are staying with may not be required information and it seems to be unnecessary detail unless specifically asked.

I have booked a homestay through the school/college
Usually, a Homestay has been arranged prior to you arriving in a particular country. Often these are used by students travelling to foregin countries to learn a different language, to study at college etc.
A homestay family is one that has offered there home to students (at a price agreed on with the organisation) so that the student can experience a country as a living with locals. This is immersion into a language and culture and a great way to learn a new language.
The easiest way to explain where you are staying is to simply say "I am staying with a local family when I get to Australia" or if they know what a Homestay is you could say "I have organised to stay with a Homestay family"

It is correct to say that you will be doing a homestay, however in some countries the word is not common. In my country for example, I would say that I am staying as a guest in a locals' house.
「I will be doing a homestay（ホームステイをします）」は正しい英語ですが、国によってこの単語は一般的でないことがあります。例えば、私の国では：

In my area we do not use the term, "homestay". We would say, "I plan on staying at my friend's house" or "I will be staying at my family's house". You could also just name the city or state you will be staying by saying, "I will be staying at my friend's house in California."
