野菜や果物の収穫は、pick といいます。農家の収穫は harvest と言った方がいいです。
枯れてしまったトマトは dried up tomatoes です。文章にする時は、
I saw that the tomatoes had dried up
トマトが枯れていることに気付いた
という感じです。
Since I was so looking forward to picking the tomatoes, I was devastated that they had all wilted away.
僕の場合はナスとピイマンでしたが、がっかりするもんですな
「Since I was so looking forward to」⇒そんなに期待してきたから
「 picking the tomatoes,」⇒トマトを獲る
「 I was devastated that they had all wilted away.」⇒全部枯れてしまったことにがっくり
Wilted awayは普通に花の枯れることを表すんですが人の力やエネルギーなど、だんだん力が抜いていくことに使われています。
