のように言えます。
ただ単に「あんまり興味がない」と言うなら
I don't have much interest in ...
のように言えます。
例：
I'm not that interested in Japanese Anime myself, but I have some friends who are really into it.
「自分はあんまり日本のアニメに興味がないけど、友達にすごくはまっている子は何人かいるよ。」
I don't have much interest in Japanese Manga.
「日本の漫画にはあまり興味がないです。」

「〜にはあまり興味がない」は英語で「I'm not really interested in ~」と言います。「あまり～ない」という形は英語で「not really ~」です。「not that interested」もネイティブとして大丈夫ですが自分がよく使うのは「not really」のほうです。
