Keeping an eye on something means to watch it carefully, normally to prevent something bad from happening. It is a common phrase used in every day conversations. If you need to watch the
kids in the pool to make sure they are safe you can ask someone to
'keep an eye on the kids'.
You can 'keep an eye on' anything. e.g.
Please keep an eye on the soup and make sure it doesn't boil over.
Keep an eye on the time, we don't want to miss the train.
However, if you are just watching kids playing in the pool and you dont have to keep them safe then you would not use this phrase, you would simply say you are 'Just watching the kids playing'.

A "rescuer" is a person who saves someone from a difficult or dangerous situation. "Adult supervision" is when you have children swimming at home and you sit by the pool and supervise the children to ensure their safety and that they do not get injured while swimming.
