damp down には「火を弱める」という意味がありますが、通常、例えば コンロの火よりもっと大きな火に対して使いますから、次のように言うことができます。

「焚き火が大きくなりすぎる前に、火を弱めた方がいいよ」
to damp down the flames のように言います。
もしコンロの火のことを言うなら次のように言えます。
ーYou should turn down the heat if you're going to leave the kitchen for a while.
「キッチンをしばらく離れるなら、火を弱めた方がいいよ」
to turn down the heat で「火を弱める」
