A night service or an owl service is a public transport service which operates through overnight hours, while most people are asleep. We use the word owl, as the bird owl is a nocturnal creature that stays awake and hunts at night and sleeps through the day.

but in Europe they do, sometimes you can book

In the US they refer to an overnight or late-night flight as a "red-eye".
If something happens overnight, it happens throughout the night or at some point during the night. For example, "We took the overnight bus to London." "We are travelling overnight by bus to London."
In UK English, a "coach" is a kind of bus that is used for longer journeys and is more comfortable than a normal bus.
"I took the red-eye to Los Angeles."
the most common way to describe this would be to say "overnight bus" but a casual or slang term for this kind of service would be to call it a red eye bus. it is called a red eye because people who will travel overnight will over be sleepy.
