「見ないで」と「見ずに」はwithout looking (at)です。
ギターの弦はguitar stringsと言います。
「弾く」はpluckとpullのことですが、楽器を弾くことはplayです。他の言葉はstrumです。strum the guitarで全部の弦を同時に弾くことになります（コードを弾く時に使えます）。
例文：I want to be able to play the guitar without looking at the strings.

「ギターを見ないで弾く」は英語で「Play without looking at the guitar strings.」と言います。「～ないで」という形は英語で「without ~」と言います。元の文章は「ギターの弦」が書いていなかったですが、ギターを見ながら弾いてるのは弦を見ているので自然です。
