この場合、次のように言うと良いですよ。

ーI get a coffee at a convenience store in the morning on the days I go to work.
「仕事に行く日は、毎朝コンビニでコーヒーを買う」

ーI get up an hour earlier when I go to the gym.
「ジムに行く日は１時間早く起きる」
when I go to the gym の代わりに on the days I go to the gym のようにも言えます。
