この場合、次のような言い方ができますよ。

ーI had no idea you guys cooked your steaks to the customer's liking.
「客の好みにステーキを焼いてくれるとは知らなかった」
I had no idea で「初めて知った・今まで知らなかった」
to the customer's liking で「客の好みに」

ーI didn't know I could ask to have my steak cooked the way I like it.
「好みにステーキを焼いてもらえるよう頼めるとは知らなかった」
the way I like it で「私の好きな方法・好み」
