「この間は親切にしてくれてありがとう」と言いたい時は、
Thank you for being so kind the other day. （先日は親切にしてくれてありがとうございました。）
と言うのが一番シンプルで使いやすいです。the other day は「先日、この間」という意味で、数日前の出来事を指す時にぴったりです。
