"Intentionally" Means to actively do something, we usually use for something that would normally be an accident. "On purpose" means the same, but it is used after the thing done. "Intentionally" can be used before or after. "Miscount intentionally" is acceptable.
"Miscount" Means to count to the wrong number. If used on it's own it means by accident. So you should use "Intentionally miscount" or "miscount on purpose"
But we cannot use "miscount" for age. In this case we would say "lie" as in "She lied about her age."
「サバを読む」は「ごまかす」ということですので、
fudge (the count)と言います。
「サバを読む」は年齢について
言うことが多いと思います.
She fudged (the count) on her age by three years.
彼女は年齢を３歳サバを読んでいた。
ちなみに「年齢のサバを読む」ことを
age-fudgingと言いますので、
併せて押さえておいてください。

年齢に関して用いる「サバ読み」という前提で解説いたします。
経験上、一般的な言い方は最初の lie about your age（自分の年齢について嘘を言う）だと思います。ネイティヴスピーカーが実際に使っているのを聞いておぼえた表現です。
二番目の表現は会話ではなく文章で見かけた言い回しですが、会話でも問題なく通用するはずです。
subtract は「差し引く」という意味です。よって subtract a couple of years from your actual age は「自分の実際の年齢から２、３才差し引く」という意味で、つまり「年齢のサバを読む」と同じになります。
