There are a lot of things schools don't teach you.
１つ目の英訳は、「学校で学ばなかったことがたくさんあります」という言い方です。
a lot of things I didn’t learn で、「学ばなかった多くのこと」になります。
a lot of things that I didn’t learn とthat を加えて言っても同じです。
１つ目の英訳をもう少し一般論的にしたものが２つ目です。
「学校が教えてくれないことはたくさんあります」という意味になります。
１つ目の英訳は「私の学校時代」のことを話しているのに対して、こちらは「世間一般の学校では」という意味になります。
schools don’t teach you と、主語が人間でないことに違和感を覚えるかもしれませんが、普通に使われます。
一般論的に言うのであれば、１つ目の英訳を少し変えて
There are a lot of things you don’t learn in school.
としてもほぼ同じことが言えます。
There are a lot of things I didn’t learn in school.
There’s a lot that school doesn’t teach you
１つ目は、自分の個人的な場合に使います。
他の人だったら大丈夫かもしれませんが、僕の場合は学校で習わなかったことが沢山ありますというニュアンス。
２つ目は誰にでも当てはまる、一般的な現象です。
ですから、一般的な「you」を使います。この「you」は「あなた」ではなく、「誰でも」という意味です。
In Japan, you eat with chopsticks.
In America, you speak English
などなど
① We learn more things in the real world than in school.
② We learn so many useful things in the real world (that) we wish were taught in school, but usually aren't.
①=「私達は、学校で習うよりも、現実の世界で習う方が多い。」
the real world=「現実の社会」「現実の世界」学校から卒業した後の世界
②=「学校で教えてほかったけれど、実際は教えてもらえなかった、たくさんの役立つことを、現実の社会で私達は学ぶ。」
ここの例文は、that以下が仮定法で出来ていますので、注意が必要です。
"We wish they were taught in school."＝「学校で教そわることができたらいいのに。」
この文のtheyを関係代名詞の先行詞として考えて、thatの前に置くので、we wish were・・・となります。
they=so many useful things
ちょっと難しいですが、これは上級英文法の使い方に当たります。

It depends if you wish to talk about just academic learning or 'life' learning. If you are discussing the idea of academic learning - that is, completing courses using schools, colleges and universities, you may say:
"Though my early education was lacking in some ways, I made up for it by completing courses after graduation." If you wish to extend your particular experience to make a general statement, you could continue: "There are many learning institutions available for mature students."
If you are speaking about all learning, including academic learning, you could say:
"What we don't learn at school, we can learn later in life."
あなたが単に教育機関での学問について話したいのか、人生での学びについて話したいのかによって異なります。
つまり学校、カレッジ、大学での学業を終了する話であれば、以下のように言えるでしょう：
"Though my early education was lacking in some ways, I made up for it by completing courses after graduation."
（早期教育課程では至らない部分もあったが、卒業後にそれらのコースを補習することでで全てを修了することができた）
あなたがどのような経過を辿って学習したのか自身の事を言及したいのであれば、次のように続けることができます：
"There are many learning institutions available for mature students."
（大人が利用できる学習機関は沢山あります）
学問的学習から人生の教訓のようなもの全てについて話しているのならば、以下のような表現ができます。
"What we don't learn at school, we can learn later in life."
（学校で学ばなかった事は、あとで人生で学ぶことが出来るでしょう）

There are many things that I didn't learn in school
You can explain that once you leave school, there are many things that you begin to learn that weren't taught while you were at school. After school, when you begin to work and function in society, you gain experience which you can't get while at school.
