「〜にぶつかる」は、bump into~ や run into~ と言います。
He hit somebody という言い方もできます。
「お盆をひっくり返す」は、knock over one's tray や spill one's tray ということができます。
「お盆をひっくり返して飲み物をこぼす」だと、spill the drink(s) on one's tray という言い方できます。
ちなみに最近はウェイトレスやウェイターを総称してserverと言います。
