There are several ways to express this. Appetite refers to one's desire to eat. The word 'hunger' can also be used, but it is not commonplace. One can also simply use the adjective 'hungry' to describe the state that you are in.

If you do not have a desire to eat today, its either you have already eaten something that has made your stomach full or has taken your appetite away. You have appropriately used the noun 'appetite' which means 'a natural desire to satisfy a bodily need, especially for food'. You can also have an appetite for other things such as 'an appetite for adventure, 'an appetite for entertainment'. You can also have a 'healthy appetite'.

I have written some simple examples, which are easy to use and understand. 1. Hungry = to have a craving for food. In other words, "not hungry" means that you do not crave (want) food. 2. "I'm full" - When something is full, nothing else can be added. In this case, you are full (your stomach is full) and you cannot eat any food. 3. "Appetite" - the desire to eat. If you have no appetite then you have no desire or want to eat anything.

These expressions are expressing that one isn't hungry, and doesn't have to desire / need / want to eat any food today. To not have an 'appetite' is the term for not having the desire to eat.
