[レストラン](https://eikaiwa.dmm.com/uknow/questions/36334/)やカフェの店員は「waiter / waitress」や「barista」などを使いますが、コンビニやスーパーの[従業員](https://eikaiwa.dmm.com/uknow/questions/52453/)は「store clerk」、もしくは「clerk」だけでも大丈夫です。
もしくは「employee」を使っても大丈夫です。
例えば、「あのお店には何人店員がいますか?」=「How many employees work at that store?」
例:
I asked the waiter for some water.
店員さんにお水をお願いしました。
The convenience store clerk didn't look very happy.
コンビニの店員さんはあまり楽しそうではありませんでした。
cashier/ checkout girl/ checkout boy (person who handles the cash/money) ... bag boy / bag girl (person who bags your groceries)
The person who greets you in a clothing/department store and shows you around is called a customer service associate.
The person who guides you in a supermarket is the supermarket attendant or grocery store employee.
The person who handles your cash and credit is the cashier.
You can also say checkout boy/girl for the person who handles cash in the grocery store/supermarket and bag boy/girl for the person who bags your groceries.
You can also generally say "store clerk" for the person who assists you in any store.

In the UK these three expressions best describe someone who works in the shop.

a cashier is a person who works behind a counter or somebody who will work with a cash register.
a shop assistant is somebody who would do more general jobs such as packing shelves or cleaning.
a manager is somebody who is the boss of the store or somebody who is in charge of the employees of the store
