スーパーのレジの人とか一般の店の店員さんはどう表現すれば良いですか。よろしくお願いします。

レストランやカフェの店員は「waiter / waitress」や「barista」などを使いますが、コンビニやスーパーの従業員は「store clerk」、もしくは「clerk」だけでも大丈夫です。
もしくは「employee」を使っても大丈夫です。
例えば、「あのお店には何人店員がいますか？」＝「How many employees work at that store?」
例：
I asked the waiter for some water.
店員さんにお水をお願いしました。
The convenience store clerk didn't look very happy.
コンビニの店員さんはあまり楽しそうではありませんでした。

たとえば、電化製品を扱うお店などでは
salesperson
sales clerk
といいます。
これは「販売員」という意味で、TOEICによく出てきます。
その他は、皆さんが書かれているように
レジの人は cashier
一般の店員さんは
shop clerk

といいます。
なお、shop と storeの違いですが、
大まかに言って、大きめのお店・出来上がったものを売っているお店はstore ということが多く
例・department store
小さめのお店で、そこで何かを作って売っているようなお店は、一般にshopといいます。
