文脈はちょっと不明ですが、私は思い込んだのは、イベントがあって、でも相手が参加したい時期はイベントの前か後ですね。
「開催する」は一般的に言うと「hold (an event)」ですが、他の言い方もあります。
「the event is going on」= イベントが起こっている
「during the event」= イベントが続いている間
でも「参加」のことは不明です。どんなイベント？相手は、観客としてか、上演者としてか参加したがっているですか？
観客だったら「attend the event」「come to the event」「visit the event」とかは言えます。
上演者だったら「appear at the event」「perform at the event」とかは言えます。
We're not holding any events on the dates you would like to attend.
We're not having any events on the dates you gave us.
この場合、次のような言い方ができますよ。
ーWe're not holding any events on the dates you would like to attend.
「参加を希望されている日は、イベントを開催しておりません」
ーWe're not having any events on the dates you gave us.
「いただいた日程にイベントを開催しておりません」
